Patina or keepin 'er lubed?

big patina fan here. and thanks for the tips guys. heespharm, i love that "marker" idea. easy. and SG, i may pick some of that up (price depending). i really should up my "board butter" game anyway, as i just use a mineral oil sponge on my butcher board. dual purpose!
 
Both. I let them develop a patina but keep them oiled (boos block or mineral oil). If ever I think there is a chance of rust/pitting developing I give them a good polish with a flitz type product and start again. I've given up trying to keep O1 pristine and enjoy the pretty colors!
