Patina or No Patina?

I keep them polished, but I am relaxed about how often I do it, so a patina may develop in between maintenance sessions. My carbon steel knives don't really develop a patina unless I use them to cut fruit, and I have SS knives available for when I need to do that.
 
Every so often I give my users a spa treatment..Clean knife and polish off the patina. Patina comes back within a couple weeks of use. So, even though I polish off the patina my knives usually have a patina from use.
 
Mostly I just let it happen. I forced a patina with vinegar on a Mora, but wasn't wild about it. I used my yellow sodbuster to cut a lot of limes and let it sit, which i liked a bit better.
