I just drew this up, the blade may be too wide, but you can modify it. I dont know fillet knives well, the diemensions of mine may be off. Feel free to use it.
I really depends on what fish and some personal preference. Look at www.dexter-russell.com and you'll see the large number of different types .Narrow/broad, stiff/flexible, long/short etc.The steel ? I think the nicest might be CPM 154 !
