Just got done deep frying a 14 # turkey and a 6 # chicken , now with the smell
that's left in my shop i'll want to eat for a week.

man i can smell it over here. so how did the turkey quenching go ;). i bet parks #50 would work just perfect:rolleyes::barf:
 
I will be HT'ing a Turkey in some peanut oil on Thursday. If you haven't tried this then do so. No tempering required. Three minutes per pound for the most juicy turkey ever. I am soaking mine in a nice tasty brine till then. A quick note that the peanut oil and brine are the best quenchants for blades since Parks 50 is too expensive.

I will be HT ing two 16 pounder myself... Good stuff! I wonder how much Peter's HT charges?????
 
We reuse the oil to do hole chickens the week end after the big turkey day. then we strain the oil and save it for about three different times, then i send it to the dump. we do our birds 3 1/2 min. per pound.
