Depends on the fish and how heavy their bones and head are. Snapper I get around 40% of total body weight in fillets. So a 30lb snapper yields about 12lbs of fillets. Mackerel is probably closer to 60%...maybe even higher. Obviously those numbers will also depend on your knife is and how good you are at using it.

Personally I'd be concerned with hooking anything named "snapper" hah

Man, sorry I missed you on my Louisiana trip. Things were crazy busy there trying to help my Dad with some business stuff and I didn't even make it to Tioga. Next time maybe.
