Pick-bone is my very favorite, and just shouts hand-made quality. Some of the newer jigging can come close, with deep and random cuts, but just isn't quite the same. Here is an example of the newer high quality jigging from Olberts in Germany, circa mid 1970s.
This nice Remington UMC from 1995 comes close as well.
My only example of what may be the real pick-bone is this Simmons Keen-Kutter jr. cattle knife.
