is 80 grit sand paper too course?

80 is a bit fierce... in my opinion.

180 Wet 'n' Dry is as low as I go when working on edges.. and that is aggressive enough to take away the original bevels.

The trouble with 80 Grit is that you have to spend time removing the deep scratches it causes.... as you can see in your photos.

600 grit will progress a 180 grit finish and 1000 will progress a 600 grit finish.

I was using two mouse pads stacked on top of one another and have since began using only one.

Good... as you can see from your results... the two mouse pads had too much give in them... so your edge was too rounded.

I use a strip from a cheap camping mat... I chose the firmest one in the shop and it is much firmer than a mouse mat.

Machine assisted.... I can not bare the scandle. :o

Pure?... nah.... I discovered the buffer technique by accident... it's a 3 stage polish job... and it works well.

The edge still has to fully formed by hand though.

ok I have figured out the problem, I am definately sharpening everything but the actual edge...should I increase or decrease my angle while sharpening? btw I pull the knife away from the edge instead of pushing against it. Should I decrease the angle and remove more material from behind the edge thus thinning it more?

One tip that I learned you may find helpful is to mark the edge with a "Sharpie" marker. Then you can tell what part of the edge you are actually working. It also helps if you have a 10x magnifier or loupe to see better.
 
Looks ok to me, you just need to stick with it and keep moving to higher grit paper, eventually getting the polished edge with a leather strop and some green stuff or flexcut gold. Keeping a consistent angle is important, but not as important as ensuring you do not use too much pressure.

I don't think I could get a close-up shot. Just blacken the entire edge bevel with a marker. After a few strokes of sharpening, look closely at it under bright light. You should see a bright line where the marker has been removed. Now you know what part of the edge you are really working, as opposed to where you thought you were sharpening.

Well I got this knife a few hours ago and the OP really had most of the hard work done. I just evened things up just a little. Ran it through some 600 grit and 1500 grit. Hairpopping sharp and pretty too.

Not to my knowledge, though I haven't checked. I figured on it taking about two days to get back plus MLK so I'll check Tuesday:thumbup: Can't wait though:D

Simple stropping will be enough to maintain that edge and now you know what to aim for when you convex your next one. :)
