Change the steel to a type more suited to big choppers. ( and one that you know what it is !)
Change the HT to include a higher temper. (400-450 for a file would be a good guess). With a known steel you will know the target hardness/toughness curves. I would use 400-425 for most chopper steel.

If you really want a big chopper that will take a ton of abuse, use CPM M-4.

Mike, when you do the Heat-treatment, how are you heating the steel?..
and when you temper, is it in the kitchen oven?
