Plate quenching question

Can you use quenching plates for something like S35VN? I've read is an oil quench steel but I don't think quenching in oil with the foil on would work too well and it might take a bit of time to get the blade out of the foil prior to getting it into the oil. What about using the plates for something like a carbon steel that is water or oil quenched?
 
S35VN is an air quench steel....not an oil quench. Use foil and quench plates.

People read a single line from a HT spec PDF and change it to say something else. In the HT specs for S35VN it says that and interrupted salt or oil bath can be used to drop it to 1000 and then air cool to ambient before cryo. This is not the same as an oil quench, and would only work for industrial applications with controlled atmospheres. Knives done in regular HT ovens should not be done this way.
 
Thanks. I was looking at the hardness chart in the PDF when I inferred that. What would be a good size for quenching plates if I was doing knives around the 10" long range? I'm going to be ordering an oven in the next week or so.
 
16"X4"X2" would be good. The thickness is best at more than 1". Roughly twice the width of any blade, an extra couple inches on each end, and an inch or more in thickness will do it. The more the mass the better.
