Recommendation? Plates and Stones

The DMTs don't dish, ever, but they can and will lose their diamonds over time. With a light touch and some luck your diamond plates can last many years, possibly outlasting you. If you lean on them, they can die quickly (months to a year or so). This is why I lean toward the interrupted surface DMTs as I honestly have had much better luck with longer life and better surface quality out of the box. I have and use both. I also have to say many of the cheaper diamond plates are showing up with much better quality than in past years, but are still buyer beware.

All of them benefit from being cleaned from time to time with Barkeeper's Friend cleanser.

Did you mean the interrupted or the UNinterrupted?

Interrupted. Specifically the Duosharp line. Their standard interrupted surface ones not so much. Of the ones I have, the Duosharps are at least as flat as the Diasharp if not more so, and the plating quality seems to be better and more uniform. Less break-in needed as well.

I also like the DuoSharps. Some complain their tip will "catch" in the holes, my response is... then you're probably grinding it off on a regular stone. ;)

Either DMT type will serve you well though... they have me anyway.

Thanks for the Barkeepers Friend Cleaner tip. I've heard about it but never looked into it. I'll have to get that to help clean up the KME stones.
 
That Reeves knife is made of s35vn steel. It can be easily sharpened on a Norton SiC fine stone & stropped to your liking. DM
Victorinox Pocket Knife Ceramic Sharpener will do for now. I have a spine injury so grinding and stropping is difficult. I don't want a razor, just a nice Inkosi that can open a package or cut a rope. (Especially if it is round my neck.. *joke*)
Victorinox know a bit about blades ;)
