Count myself v.lucky that as decrepitude has engulfed me my hands remain firm in grip and dexterity of fingers fine, my nails are tough except when going fishing and water softens them etc. Take your vitamins you out there!
The obvious and valid choices for this situation are lockbacks-which I like or EZ-Openers which both from an aesthetic POV and in use I'm less keen on. Never got my head around that huge bite out of the scales and since my ring fingertip was nearly severed when I was young it feels uncomfortable in actual use. Still, there's some fine beauties as examples and I'm lucky to have a few.
But there's more. French knives are very often such that they are relatively easy to open and very hard to close- which if you pause to think about it, is the right order of things. So a very rich seam to choose from and many have plenty of blade exposed to get hold of- nicks often being mere decoration. So why not go for a icon and a very useful one at that coming in numerous sizes and quite a number of handle options. The Opinel is a genius knife, light, thin ground, lockable (some take off the collar, crazy ) and can be opened by even the feeblest and used by all.
