Please suggest traditional non-locking folder

Secondarily; this will be my primary EDC which I expect to get a lot of pocket wear. Which handlescales would hold up the best?

Ebony is probably one of the densest and most durable woods there are and its readily available on the GEC 15 single sheep. I'm sure it would hold up just fine to whatever you throw at it. Alternately you might consider an acrylic, nifebrite or sunbrite. Not sure how it would compare to wood, might be more prone to cracking, but probably less likely to crack than bone.
 
While you aren't asking about a knife you own, I would think the question still falls under the rule about registered members asking about pricing. I could be wrong; but that's my reason for not answering.

Did they make an easy-open sheepsfoot #15 in Ebony?

This is comical; I've come up with a highly specific knife. And these things are hard to get in any configuration!
