What do you mean by "polished almost beyond recognition" and what is the end goal (or remediation) that you're seeking? Do you mean that the knife has been sharpened so much that the blade or edge is covered with scratches or is mis-shapen? Do you have digital pictures you could post that illustrate the problem? What is the condition and status of the knife (mint vs used, collector knife vs user/beater)?
Is the knife mirror-polished and you want a more matte finish?
If so, you can take the shine down yourself with sandpaper available at auto finishing vendors or woodworking stores.
Has the polishing changed the blade shape or made it look somehow non-Randall to your eyes and you want to return it to standard configuration?
In this case, I recommend sending it to Randall to fix it up.
