Pork chops.

I made these about a month ago, and they were really good:

Take some boneless center cut pork chops (on the thick side).

Butterfly them and stuff them with a slice of swiss or Jarlsberg cheese, and a slice of apple.

Coat in a honey mustard/mayo sauce and bread with half and half seasoned crumbs and plain crumbs.

Cook in skillet with olive oil.

They are excellent.

Serve with a butter-lettuce Caesar salad with crusty croutons, and your favorite porter style beer.

Oh, the next night, I did the apple juice thing with leftovers, where you sear the pork first after seasoning (salt/pepper/garlic), let it simmer w/onions, potatos, and apple juice to cover. Then cooking it off when the chops are done.

Also extremely tasty, and the chops were super tender. Think it may be doable with even cheap pork.

I need to try making some decent stuffed chops.
 
Here are a few ways.

1. Dip in seasoned flour, then beaten egg and then breadcrumbs. Cook on an oiled tray for 45 minutes at 325'F. If you want a bit of bite add Cajun seasoning to the breadcrumbs.

1a. Similar to above. Coated in a layer of mayonnaise and mustard mixed together, dipped in bread crumbs and seasame seeds and baked in the oven.

2. Brush with honey dijon mustard and BBQ gently.

3. Fry gently in a frying pan, add chopped onion, and cook until tender, add sliced apple, whole grain mustard, Calvados Apple Brandy, and flame it. When the flames die down add heavy cream, and boil until it thickens. Check seasoning and serve.

This is the first thing my wife ever cooked for me. It made me think she actually knew how to cook, 'cause it's so simple, but tastes great. Put two nice, thick, center cut, boneless pork loin chops in the bottom of a casserole. Cover them with fresh garden green beans. Add a can of Campbell's cream of mushroom soup and top the whole affair with nice, fat onion rings. Bake at 375 for about 35-40 minutes, depending on your oven, etc. Quick, simple and very tasty. If you use frozen or canned beans, it's even faster and simpler.
