You also have to fully work each grade of paper. IE: if you still have 400 scratches, 600 doesn't remove them. In fact, sometimes the higher grit will show scratches you thought were gone. The solution is to go back down and work back up.

For a working knife, you have plenty of polish on that blade. For really shiny metal, at some point you need some metal polish / rubbing compound / etc.

When polishing parts for my bike, I will usually finish with Mother's metal polish or use a good carnuba wax. This helps keep some of the shine once you are finished. For a knife, I would keep it oiled.

Good stuff. Thanks. I noticed that as I was sanding. I guess I'm a perfectionist so I worry about each little crevass where some black spots of the old epoxy were left behind and I want to sand out. I will eventually put some metal polish.
 
try using 600 grit and then use 1500, what I found was the finishing hint " touch" when sanding go with the 600 grit on one direction and then on the 1500 on the other direction ( vertical horizontal I mean) then use flitz put it on a ball of toilet paper and use circular motion ( apply little ammount) eventually you will see the mirrow finish comming. true the finish will scratch however it will make battonning easier and also it will protect the blade a little bit more against rust

Per your suggestions by jove I think I got it! Thanks for the tips. I got it polished to the point where I will enjoy it. Not a total mirror finish but shiny enough to look pretty but not too shiny I'll be afraid of a little blemish here and there from batoning. Thanks guys. I went from 320 up to 2500 just going one way and then I finished it off with some mineral oil and a microfiber cloth.:D:D:D:D:D:D:D:D:D:D:D:D:D:D
