What happens if you mail a knife you sold, the recipient requests the package be held at their local Post Office for pickup, instead of delivered to their house. (This was done after I had mailed it), and then they never go get it.

Well that's kinda what I'm wondering, is at what point can I consider this transaction done as far as I'm concerned, and what to do if they return it to me.

How long has it been? How did he pay?

As I understand it, a buyer has 180 days to file for a PayPal refund—doesn’t guarantee they’ll get one.

Well that's kinda what I'm wondering, is at what point can I consider this transaction done as far as I'm concerned, and what to do if they return it to me.

For now, the transaction is done as far as you are concerned.
If the knife gets returned to you/turns up on your doorstep out of the blue, wait for the seller to contact you and then ask for him to cover shipping (at the very least) and mail the thing to him. It has to a tracked/signed for shipping at his expense, as by now you must be wondering, what in the Sam Hill is going on.
Maybe ask for an explanation now that you are at it.

Usps will send it back to sender after a certain amount of time.
It escapes me right now how long that is, but it will eventually show back up at your address if not picked up by your buyer.

Did you ask him if he was going to pick it up?
Maybe he got busy, or an emergency trip somewherre.

But so far, your deal is done untill it shows back up at your place
