Small redskin potatoes boiled in water and beer mix, w/skin on, smash them (not mashed to a puree)
and mix in butter, another bottle of beer, onions, herbs and spices (to taste) salt/pepper
It's funny you mention maple syrup; before I'm finished with my home fries, I drizzle maple syrup over them (sparingly) and cook them another minute. It gives them a slight sweetness, but even better it gives them a nice crusty shell.
