SHS, I'm in the same boat as you. 6'5" and weight a bit more I think.
I've learned in the past few years that eating is all in your head. I sometimes still over indulge, but since I have been eating less my stomach has definitely taken a hit. I can't eat nearly as much as I used to without feeling like I'm gonna pop.
I do need to exercise more, but not eating as much is helping. I've come down several sizes in the past few years since I learned the "it's all in your head" lesson.
As far as the water use goes, I would recommend a hydration pack of some sort too. Even though you may or may not use all of whats in it it's better to have than get heatstroke.
