Pre-newb question

I was just browsing through supplies thinking about what I'd like to try first. I have some mules and other skeletonized knives so I've been mainly looking at handle materials.

My wife said she wants a new kitchen knife for christmas, and I saw a ELMAX kitchen knife blank seemingly miscategorized in with the Kirinite slabs.
It was 8" and I was planning on probably getting something closer to 10". I looked over at my wife and asked her if 8" was enough or if she wanted something bigger. She just giggled. :p

So first question, how do you guys like the Kirinite vs micarta or the Shadetree stuff?

Second, is it even worth trying a kitchen knife any time soon? I have a harbor Freight 1x32 but i haven't used it at all yet. Also considering I need a new one anyway. I could just buy a Forschner and replace it when my skill level is adequate. I think it would be awesome to make one with scales themed with our wedding colors.

Eta: she is a great cook but she's always had super cheap kitchen knives so the bar isn't set very high
 
This close to Christmas, you probably want to start with a premake blank and do a custom handle. Jantz has some great blanks from cheap to high end. I did a kitchen knife on a 1x30 this spring and it took forever. Time is not on your side at this point.
