Prepping (Infi Content)

Ah, the Chinese Box! Heard of it, but never got to enjoy pork done that way.

I had a college roommate who's family, Cubans from Miami, did that. And there was another member here, also from Miami, who has posted about roasting a whole hog like that.

I carved up a 20lb ham with my ASHBMLE this past weekend, and it patina'd up like I've never seen INFI patina.

That's actually a really cool patina. Was there any pineapple on the ham by chance?

Nope, it was a honey/spice spiral cut ham that was given to me by a contractor at work. Was 20lbs and way too much for us to eat in one sitting, so we cut a third off to cook right away then carved all the rest up to freeze. Making some ham & bean soup tomorrow with the ham bone.

It sat on the counter for an hour or two after we got done with it before I washed it off.
 
I'm sorry but to be honest, that picture grossed me out a little...

I dig on swine, no doubt about it. Looks awesome jball, and the patina really adds a nice touch to your ASHBM Skrapmetal.
