I bought this in June from Portland Knife House. They were one of the only other knife shops that I found that had it. At the time Chef Knives to Go was sold out and usually are. I paid $110 for it plus $45 for the custom saya.

The knife has been used a handful of times. I just never clicked with it but it gets rave reviews and it slices extremely well. I've lost the plastic pin for the saya (a couple of bucks for a new one) but that was never an issue for me.

Going to price this at $100 shipped for the knife and saya.

What are the dimensions of the blade, what kind of steel is it made of (if more than just carbon steel) and what's the total weight of the knife?

Tried finding the info on Portland Knife House's site but they use a FB page and I don't "do" FB. Have a large collection of Chinese cleavers that I use and need the info to know how/if it will fit w/in that collection.

Thanks!

I would like you to ChefKnivestoGo but I don't believe they're a sponsored member here. It is a "Carbon Steel" but I'm not sure what. I have the smaller version as well and this one slices as well.

Here are the specs that they give:
  • Weight: 14.5 ounces
  • Blade Length: 227 mm (9")
  • Overall Length: 330 mm (13")
  • Thickness at Heel: 2.8 mm
  • Blade Height: 110mm
  • Handle Diameter:30.5mm
