It only took me 13 years, but I escaped from the hellish world of the professional kitchen. Result: We have here two nice kitchen knives for sale:

Wusthof 10" Wide chef's knife (4584). Blade flats are scratched up. This knife had a few minor problems from the factory - the handle rattles (not at all loose though) and the blade is not quite straight (Subtle!). The edge, however, has been well taken care of and is just about exactly sharp enough. No sharpeners ever touched this thing besides a polished steel, ceramic steel and a diamond loaded strop. I always used plastic cutting boards. I never let the other guys use it. I only used this thing in the kitchen for about 3 months.

Other one is a Shun Classic 3.5 inch paring knife. Its a little beat up (Fine scratches on the blade and a ding in the buttcap) but the edge is perfect and it is razor sharp and ready to go.

Prices-- I gotta get 170 for the Wusthof, and 50 for the Shun. If you buy both, you will get both of the LamsonSharp Bladeguards for free. Otherwise, I'm keeping the bladeguards.

PRICE DROP - Get both knives and both blade guards for $200

Paypal preferred.
I eat shipping and insurance, I eat Paypal fees.
