Pro quality cookware - what do u folks use?

Only one person, so far, has mentioned a pressure cooker. The rest of you are really missing out on a great cooking tool, and should go out and get one. They can't do everything, but they are incredibly useful, and there are many things they do better than anything else. They cook food in a fraction of the time, with less energy usage; they make meats much more tender; they infuse flavors much more thoroughly; and they preserve the vitamins in the food much better.

Mine's an Aeternum. They're have excellent ergonomics and great saftey features, and are built to last.
 
Pressure cookers are great for making split pea soup, too. And they really cut down the amount of time for cooking beans, like black beans and garbonzos. I have a microwave pressure cooker that I really liked, but the gasket gave out and I don't know how to get a replacement. It was good for quickly making the longer cooking rices, which I guess you could also do in a regular pressure cooker.

Well, try as I might my wife will not sit down and give her opinions.

My wife is a houseware/gift buyer for a large
store and sells most better cookware, also a great cook.

She loves All-Clad. Claims it cooks better than any.

This week she brought home a Kitchenaid fry pan. I fell in love with the look and heft of this. She had just been to a seminar by Kitchenaid and they stated the design was made to be attrative to men. Worked on me.

For those interested there is a Gourmet trade
show in New Orleans, end of April. Not cooking but cutlery, cookware etc.

My wife's mother uses a pressure cooker. She tells me she uses it for soups and for making pieces of unedible meat palatable. If you ever had her cooking you would disagree....LMAO.

The Kitchen Aid pots/pans look real nice. They are more $ than the All Clad sets I have seen. I like the no frills All Clad set with the brush aluminum on the outside and SS inside. I need to get a larger cast iron frying pan and dutch oven as well. Mixing various pieces look like its the best way to go.

Hmmmmmm - split pea soup with some Virginia smoke ham would be nice right now.

That New Orleans trade show would be sweeeeeeet! I know would spend more $ there than at the Blade Show. Food is my #1 passion.

Ray, New Orleans is one fine place, especially for good food. Everyone should visit Bourbon St. at least once in their lifetime. Unique place to say the least. Whatever you are looking for, you can find it on Bourbon St.
