Production knife for fruit

For a fixed blade, I would buy a small kitchen knife or paring knife that comes with a blade cover. Tons of them out there, many for under $10. Examples off the top of my head are Kuhn Rikon, KAI Pure Komachi 2, KAI Luna. All come with hard plastic sleeves for the blades. I have some made by KAI that I bought at a kitchen outlet store for about $6 that do great on apples. For a folding knife, my favorite is a Case Slimline Trapper in stainless steel.
 
I have an old Schrade SS105 "fruit knife" a gentleman gave me years ago as a gift when working as a mate on a charter boat. Still have it, gets razor sharp. Not for heavy use but works great on citrus and many other fruits.
 
What is a good small production knife for fruit. I thought about the Cold Steel Master Hunter or SRK. It has to be small, not too expensive and fixed blade.

Define "too expensive"? A few options to consider:

Boker+ cowboy crossdraw both for a stainless that a bit cheaper.
Or Bucklite in bos-420hc even cheaper yet.

All would make perfectly suitable fruit carvers in the 3" range, depending on ypur budget.
