Proper way to restore carbon steel?

I may have the opportunity to help in the restoration of a large collection of old knives and swords (mainly from the East...lots of kukhuris, some kriss swords, some other Nepalese swords, not sure if there is anything from Japan or China...). Anyway, I would suspect all the blades are carbon steel. I was wondering what the least destructive methods would be to revive these blades. Thanks!
