pros and cons of the convex grind

I regularly sharpen my work knife because I cut cardboard 4 to 5 days a week. Alot of cardboard. I use the fine sharpener to maintain. If you just use the coarse sharpener it will indeed take longer if you strop. You have to use the fine or extra fine then strop.

Am I correct in assuming you just focus on the edge of your blade? And again, on jeans, how much do you have to strop before you get results? The reason I am so curious about this is because I always liked the idea of being able to maintain a blade in the field with minimal equipment, but could never seem to get any results when stropping on my jeans.

yes just the edge. After using the fine diamond sharpener, just about a half dozens swipes, each side of the edge on my jeans, will do the trick. When you try it, blacken the edge with a Sharpie, that way you'll see where you're hitting along the edge.
