Prototype Ultrathin Santoku in s35vn

This one is 10 3/4" OAL with a 6 1/4" Blade. S35vn full convex grind with zero convex edge. Thickest part of the convex is .038 which is less than 1mm :eek: Handles are olive linen with yellow liners. It can easily whittle hair and goes through hard potatoes like butter.

This was my main kitchen slicer and the very first of the ultrathin santokus. I have since refinished it and added a prototype logo to it. Comes with kydex sheath. Asking 390 shipped. Now 330 SPF!

She could always use it in the kitchen brother! At least...that would be MY way of justifying it to her LOL.
 
I have a similar (but a bit thicker) knife from Ban. I use it every day. I guarantee the pleasure of using this knife will very quickly calm any concerns about the money spent.
A sharp knife like this makes for faster and better (more even cuts) food prep.

Thanks, Ban. I’m always looking forward to what you’ll do next. Your knowledge, and more importantly your application, of blade steel and geometry balanced to get the highest possible performance for a specific application put you among the top knife makers in the world, IMO. That you’re always pushing the envelope is an inspiration. :thumbup:
 
If this is the same one that Ban had with him at Blade you are going to love it! I was really tempted but I have a few orders coming up soon (hint, hint Ban:foot:) so I must not be greedy!
 
I told myself that one day I'll get a handmade wa-gyuto when I get some extra money. I think I'll rather have one of these.
