How would the spoofer know that a person wanted to buy a knife from New Graham and was ready to send funds? Guess I'm dense, but not sure how this works.

Likely got ahold of an address book and/or distribution list of customers/followers and sent an email blast.
 
I got one and then a follow-up this afternoon it was sent in error by someone doing something on their back-end system (which makes sense because they had my actual order details from a few months ago).

Good afternoon! It has come to our attention that our customers have received an email requesting a bank wire transfer. We wanted to reach out and assure you that this was sent by mistake. Our off-site software techs were updating the back end of the website and sent out this email in error. We want to assure you that your information is secure and this was not an outside attack, simply a mistake of hitting the wrong button. We apologize for any inconvenience or confusion. We appreciate your business and look forward to helping you again.
