Okay, on the zamak/aluminum handles is it possible to remove dings and scratches somehow? maybe sandpaper with a super fine grit? Or with some kind of filler metal?

Zamak is very course and very porus stuff and it's typically blow moulded which leaves a lot of small voids. The smooth finish you see is typically chrome plated on top. So, sanding or filing on Zamak isn't a good idea.
Aluminum, though, can be easily polished to remove minor scratches and dings. One of the best tools for the job is a Dremel Mototool.
