quench oil suggestion for 110WCrV5 (1.2519)

Hola gentlemen, I'm wanting a little re-assurance I suppose on my quench oil decision for 110WCrV5 (1.2519) steel. The question is fast vs not so fast oil, and I'm seriously leaning towards not Parks 50, but probably canola at 130F. The steel is like 52100, but has quite a bit of Tungsten, which allows for super low edge angles. As the bar is only 1.6mm in thickness, it will most definitely be heat treated before bevel grinding. Planning on making a petty kitchen knife. Thanks for your suggestions!!!
