If you are using Parks#50, you do not have to heat the oil in theory unless your shop temp is below 70 degrees. I use a big 30 quart turkey fryer potfor my tip down quenching and a 19 inch turkey roasting pan for other stuff. One note of warning about the turkey fryer pot. If you get one, make sure your smear some epoxy or caulk around the rivet holes for the handles or you WILL get a slow leak if you fill it all the way up to the top. As for the Paragon, it takes a LONG time to cool off after being at austenizing temp so be patient.
