Question about ~1850-1920 era knife materials

On the knives made from the mid 1800s to the early 1900s, what was the predominant liner, bolster, and pin material? I'm designing a swell end jack, and I've about got it done, but I need to decide on materials. I want to do one in ebony, which I have a scrap piece lying around, and maybe one in some jigged honey bone I had from another project. Other than that, I'd hear suggestions.

So basically, what are period correct materials. Factory catalog pages are awesome too if you want to post them!
