Question about overheating before quench

Right before a quench, what can I do to save my blade if I overheat it? If I get it too hot, can I pull it out of the fire and let it cool a little bit before I quench it, or do I have to do my normalizing again? I'm trying to do a two-stage quench in water for a couple of seconds then finishing in oil, so I want to make sure my steel (Admiral 1075/1080) isn't too hot (I cracked a blade the other day).
Any thoughts?

The title of this one hade me going Hesparus;). But consider this, if you pull your blade from the heat and just let it air cool instead of quenching, well that would be called normalizing:). If you feel you overheated enough to grow grain you should correct that with cycles, but if you feel you just got it too warm for water let it air cool and run at it again.
