All,
I have a paragon oven with a digital controller. It works great to bring the blades up to quenching temp but I'm not sure how to temper with it. The program is set to bring the oven down to 400 deg. for an hour but the temp keeps jumping up way past 400.
Is this normal?
I thought I was supposed to get the blade into the tempering oven ASAP after the quench. (speaking of O-1)
Any thoughts would be great.

Dan it sounds like you are trying to temper in the Paragon right after having it at quench temperature. It takes that oven several hours to cool back down to a temperature you can use it for tempering in. That is why most of us have toaster ovens to do our tempering in.

Bill is pretty correct. I have an Even Heat oven, but the principle is the same. So as not to have varying temps at quench, I let my oven soak at quench temp for 1 hour before placing my blades inside. This brings the ENTIRE mass of the oven up to heat. I have also placed a 1/2" thick piece of plate steel the size of the bottom of my oven in there to increase the thermal mass of my oven and to even out radiant heat to the blades from all directions.
After quench, I open the door, I turn the heating cycle "OFF", but leave the temp controller in the "ON" position reading the internal temp. as the oven cools down. It usually takes about 1 1/2 hours for the oven to get down to around 400.

All,
Thank you so much for your help,
I think I should invest in a toaster oven and a good thermometer.

Jim,
I'm just outside of Warrenton, near the Shenandoah / Luray caverns

I think its safe to assume there are more politicians in Virginia than there are knife makers. That might be because it takes skill to be a knife maker and most of them are honest!
