Question about some maple

I was just given a few blocks of maple that has some really nice grain. And the blocks are about 6x6x1.5 inches. What I am wondering is will it be ok for handles and how stable would it be. I would not even think of using it if it was just raw, but its pieces off of a butcher block counter that was ordered too long, so I think it should be pretty stable. My line of thought here is that it must be stabilized in some way because they would not use materials for a counter top that may warp or shrink. What are your thoughts on this? Scrap it and don't worry, or try some out and just see what happens?
 
Maple is kiln dried before any use, like making a butcher's block. It can be used as it is. Is it laminated into strips, or a solid 6X6X1.5 piece?
