question about title under user name

What do you want it to say?
 
Here in a couple of weeks I'm thinking I'm going to change my business to Alaska Knife--getting out of the gun biz all together. At such time, I'd like the title to read Alaska Knife. Is it the case that I can't switch around as I want, as I don't seem to have that enter a custom title field even though I ordered it.
