Cliff,
lets say you sharpened an asymetrical edge and left the burr on the convex side. I'm wondering what would happen if that edge was used as a chopper un-stropped? Would the chopping remove the burr effectively? Is the blade going to be super sharp?

Steel burrs because it is ductile meaning it can deform. A burr is metal actually bent out of line with the edge, it is much weaker because of this and will crack off very quickly during use. When it cracks it will leave a very ragged edge behind and will be after removing some good metal with it.
