There is a company called Stickman http://www.stickman-escrima.com/Products.htm that specializes is sticks used in Escrima. They have both rattan and some synthetic products and if it will stand up to the beating produced by Escrima it should stand up to almost anything.

Ash, Hickory & Locust would all be great. As would Rock Maple (also known as sugar maple, hard maple). All the above are hard and lightweight.
