I was thinking of selling them as shown, with no sheath, for $100 shipped.

being fairly "frugal/value driven" I was thinking i would pay $90 for something like that plus shipping, so your $100 price point should work well for other cheapskates like me. :)
I do not dispute that your knives are well worth the asking prices you put on them, but I don't have the spare funds for a $165 or $225 knife very often.
$100 is a good starting point for enticing folks out of buying production blades. (gateway custom)
 
I honestly was thinking the thinner blade would be a great slicer! I really like it John
 
Yes - the 1/16" is the ultimate slicer - as is evidenced here with ripe tomatoes -
