Questions on a matched pair of knives

I posted this in the general forum and it was suggested that I post it here.
I recently adopted a baby boy. As a gift for the Birth mother and my son I am planning to have matching knives made. The mother fishes for Salmon (smokes and preserves it) and hunts extensivly. I am not sure if there is a single blade style that would be appropriate or if I should focus on one side or the other ( suggestion was to focus on one or the other, which I concur with). Also I would like recommendations on a good steel, I keep thinking Stainless like AT34 or CM/CPM 154 (I would love to get a great Carbon blade, but am concerned about how it would used).
Also do you know someone who makes something like this that could produce a pair in less than a year. My budget would be around $800 for the pair. I would like something that is a great looking user that both will cherish. Steven
 
There are lots of knifemakers that would be glad to do this, and complete it in way less than a year. Price depends on the quality of the craftsmans work and his/her experience, or it should anyway.

You are not giving up anything by using ATS34 or 154CM over regular tool steel(so no need to feel guilty) except no steel taste in the cut meat and no rust on the knife if it's halfway cleaned. No discoloration of the blade either.;)

Another good steel for fishing and hunting knives is 440C heat treated by a pro with cryogenics as part of the tempering process. It has more chromium in it, so less chance of rust or corrosion than even ATS/154CM.

i hunt and fish alot also, they are differtent knifes for different jobs , cleaning fish versus cleaning a deer or elk. find which knife style would be utulized more a filet knife or a hunting knife and go from there, if u happen to catch alot of salmon a quality filet knife is a dream come true.
