So my Parks 50 quench oil came in last night and I absolutely cant wait to try it out. I just got to get enough knives ready for heat treat to warrant turning the heat treat oven on I have been forging and grinding knives for the past two years or so and i have been using canola oil for practically everything. I tried some of Aldo steels recent batch of W-2 and i gotta say its my (temporarily) new favorite thing. This stuff grinds good, forges good, and I have successfully finished my first Hamon on it (ill post a picture when I get home).

Now the steels that I mostly work with now are:
W-2
1095
1085
5160
52100
440C

What other steels out there require a super fast quench? I know on my list the 5160, 52100, and the 440c need a nice medium quench so my canola works great for it. I just wondering because Im trying to expand my heat treating knowledge.

That surprises me, Don. I've always quenched 5160 in canola and the steel seems to love it. Okay, that's a little much, I mean I get good solid Ht's using it.
5160 doesn't 'need' a fast quench, but a fast quench wont hurt & will likely get a point or two higher hardness.

I quench all my oil quench blades in parks #50.

The Hitachi white and blue steels require a very fast quenchant approaching water speed.

I'm glad to hear this because I do too. I've never seen anything negative from doing it and it just makes for less hassle and prep especially if I'm doing a run of multiple alloys.
