Quick chili ?

Andrew, feel free to post the recipe anywhere you like. It's the winning recipe for the First annual chili-cookoff in Terlingua, Texas from way back in 1967. The recipe has probably been printed thousands of times over the years.

Ebb-I'm right there with you on the fresh, finely chopped onion on the chili!

I agree . . . however honey can be added to cut the burn if someone adds too much spice -- like a third of the bottle of habernaro sauce! This will make overspiced chili edible. If you don't have honey, a few commercially made barbeque sauces work almost as good.

I also agree that chili should never be served the day it's made -- it should sit in the 'fridge overnight to thicken and become more flavorful -- the same rule applies to lasagna.

The best chili is made with cubed steak rather than ground beef (if you can afford it, and have the patience to do all that chopping and slicing). 2 parts beef and 1 part pork, trimmed and finely cubed. Trust me on this one. :thumbup:

Habanero pepper sauce is one way to do it, but I prefer putting the actual peppers in. About five years ago I made a pot of chili with 19 habanero peppers, along with cayenne peppers, jalapenos, and green chilis. It tasted FANTASTIC but it was a wee bit on the hot side. Corn bread with honey on it softened the bite.

The worst part was not only did it burn going in, but it burned coming out! :eek:

Thanks. I have all the fixins to make this on Sunday.
 
When we are flush we use round steak that I cube.
The best chili is made with cubed steak rather than ground beef (if you can afford it, and have the patience to do all that chopping and slicing)
This is a knife forum, you're supposed to enjoy that chopping and slicing ;) :D

Anybody add cornstarch to thicken, if its runny?
I'd rather just simmer it longer, but you know how the hungry rabble can get :eek:

I love it with a dollop of sour cream, trust me its delicious. Also some buttered toast or saltines
For me quick chilli is wendys, surprisingly tasty. They will give you a sourcream from a baked potato if you ask.
 
Chili powder is just dried chili, onion , garlic, mexican oregano, cumin, and sometimes a few other ingredients as well.
Don't make wuss chili with powder. Use fresh ingedients, not dried and powdered crap!!!
Your taste buds will thank you!! (If they are manly enough)
Even tho its not authentic, The Almighty Tabasco Sauce is great to put hair on your chili's chest. Just add it early to let the extra vinegar mellow down.
 
Food recipes can come from diverse sources. This came from an Irish lad that is a small engine mechanic at the shop my son manages.

1 # ground beef

1 large jar of hot salsa

1 can of kidney beans

Brown ground meat. Bring bean & salsa mix to a simmer add beef & simmer for about half an hour.


Danged quick. My chili is an all day event. Will try this soon.

Gonna be an awful lot of sodium in that. It seems to me salsa always has a lot more salt than tomato sauce.

My chilli burns on the way in and on the way out. But then I'm a hot sauce and pepper pig. Johnny Cash chilli, burnin ring o' fire baby!
 
Well, this thread has inspired me to make chili!
I threw in 1 pound each pork loin, ground beef, and cubed beef brisket, 1 white onion, 5 cloves garlic, 1 small can each pinto beans, black beans, jalapenos (fresh chilis and jalapenos are 10 bucks a pound here, so I had to cheat), and green chilis, 1 institution sized can of diced tomatoes, a pinch of brown sugar, kosher salt, and homemade chili powder made by grinding up peppercons, cumin seed, dried red chilis, coriander seeds, oregano, and basil.
Oh baby!!
It should be done this evening, and I definitely plan to violate the sacred rule and eat some today!
