Quince or Stag? What is Quince?

I have been given a gift of a Browning Presentation Lockback. I have a choice of Quince handles or Stag handles.
What is Quince?
Why would I prefer it over the Stag?

Quince is a very highly figured, dark brown wood. When stabilized it will not suffer from some of the problems that stag will. It will not shrink with time and it will not crack. That is not to say that stag will either, it is just more likely to do so.
 
Just thought I would add this picture of a Buck Koji folder with Quince handle so you could see it for yourself.

Keith, That looks like a very dark "Maple burl". Are they one in the SAME
