Although for their more recent models, Chestnut jigged is stellar.
Although I think red bone and yellow delrin are probably the "historically correct" responses, I have a hard time "voting" for redbone because it's currently hard to get. There's no doubt that these days. amber jigged bone is certainly a popular and distinctive cover for Case, but if "quintessential" involves any personal preference, I'll cast my lot with Mike and Will and say that chestnut jigged bone is easily my favorite Case cover. For contemporary CASE I'd say Chestnut Bone is a worthwhile consideration

In the 2019 Case catalogue, there are 14 yellow Delrin knives in Chrome Vanadium, plus 3 in Tru-Sharp stainless steel that are not duplicates of the 14 in CV, for a total of 17 different patterns in yellow Delrin.Yellow Delrin. I believe it is being used/has been used in the most patterns also.

There are 16 amber bone SS knives, with an additional 3 different patterns only available in CV, for a total of 19.
And in stores, I see slightly more amber bone knives in stock. And among people I know, more have amber bone than Delrin.
But those two are definitely Case's biggest sellers.
