If it's absolutely pouring, I hide if at all possible. Otherwise, I use a combination any of a number of hardshell and softshell jackets to keep me relatively dry. Most of the time I just get wet, be it from rain or sweat anyway. Best course of action is to wear clothes that dry quickly.

I tend to sweat alot also so I definitely agree with the above.

Never heard of the froggtoggs till now ...they get pretty good reviews online
and for the price they're virtually "disposable"

So depending on the conditions/activities there seems to be alot of good options.

Marmot Gore-Tex shell for warm weather, The North Face Gore-Tex Parka for colder weather. Gore-Tex rain pants by various makers, uninuslated and insulated, black, camo or blaze orange, depending on the weather and the outing.

I do keep a cheap poncho in the bottom of some of my packs, but have never (ever) actually used one!

What do you all use when you're in the great outdoors and mother nature isn't cooperating ? Do you prefer good ole ponchos , a lightweight- breathable "water-repellent" shell or a gore-tex lined jacket (pricey) ?

I like Gore-Tex. I use a light weight "Pack-Away" suit for summer, (from 'Campmore,' each piece stores in its own pocket,) and a heavier Gore-Tex shell parka and insulated overpants (from 'Cabela's) for winter. These work well for me for both hiking and motorcycle riding. The trick to staying dry (from sweat) with Gore-Tex is to keep it sealed up so there is more pressure inside than outside. This forces the water vapor out and you stay dry. Keeping the jacket opened, cuffs loose, etc. (which would normally be the logical way) is counter-productive with Gore-Tex. It works MUCH more efficiently when sealed just as long as the outside temperature isn't too high!

..it's no fun huddling under a tarp for hours.

I have a feeling you need to change hiking partners. Tarp time 'can' be one of the more pleasant parts of the trip! ;)

It has to be a softshell for me ! Over here Gore-tex just don't work, you end up wetter from the build up of moisture inside than you would of if you weren't wearing a jacket !

Paramo and Buffalo are my two top choices !!!

Have you tried tight weaved microfiber? It doesn't have a microporus teflon/poliuretane coating as Gore Tex, Sympatex and such membranes. It works wonders when we are talking about snow and cold weather. It breathes so much sweat doesn't build un inside. Bad news is that it might not suit you as it is not so waterproof. It also dryes quicker than softshells.

Seam sealed waterproof certified gore-tex is the only choice in my winter field.
It's also windproof and that is good.

In summer, umbrella is my choice in most cases.
 
The problem with breathable fabrics is that when you put a pack on your pack it blocks and negates the benefits of the fabric. I use a poncho over the pack. A poncho gives you ventilation when you are moving. For around camp and hiking a breathable rainsuit works well.
