Top is Chicago SS USA boning 10.5" OAL with 5-3/8" of edge
Middle is a real old blade ,was an Old Hickory USA carbon,put into an electrolysis tank to get the rust off. I convex re ground it 11-1/8" OAL with 6-1/4" cutting edge
Bottom is Chicago butcher ,ss,USA 13-3/8" OAL with 7-3/4" of cutting edge
Figured eastern rock maple with oil finish,brass pins. Chicago blades I got some of the scratches out prior to the handle going on. I will sharpen them good before they ship
These feel great in your hand ,I radiused the handles nicely,backspines of blades are slack belted . The way the maple is finished ,provides a nice secure grip when wet or when working with food grease,etc.
