re hardening 1095 and 52100

I was doing a small run of 1095 and 52100 chef's knives yesterday and managed to burn spots on the edge of one of each while trying a slightly different post-HT grinding approach.
My thinking is that since the grain is already very fine due to previous cycling, I'll be safe simply redoing the soak and quench....am I missing something?

For some reason my Google mojo is off today, I'm sure the answer is out there somewhere, but I'm not seeing it....
Thanks for any ideas!
 
Since the blades are martensite now, i would not spend too much time in soaking; the carbon should be very ready to go into solution.
