You should look through the pictures and pick out a few combinations that you like.
I really like the Sage FFBM color combination, it's got standard thickness scales but it's a fatty so it fills the hand pretty well. For an FBM CG, Magnums feel better to me but the standards are not bad. LE's are thick with magnum grips, if they were any thicker it would be too much for my average-short fingers.
If you are going to carry around the knife for any distance, I would try to get a CG or if I had an unlimited budget, get a 2008 SE which might be the lightest FBM yet (I haven't weighed it).
If you want to strip the knife eventually, an FFBM is a good choice, there are no CBT to worry about.
There is a lot that can be done with an FFBM. If you think you will want a full convex or a satin job down the road, that's a great place to start.
I wouldn't worry about a penetrator tip, you could easily add that with a stone and I don't think you really need it any way.
It will be expensive if not impossible to get exactly the knife you want in a few years so take the time to figure out what you want and then go get it. Today the price difference between a FFBM with Magnum scales and a FBM CG with standard micarta isn't that much, so spend a little time and money now to avoid a lot more time and money (or disapointment) later.
