All are stainless, blades approx. 7", thickness range fro 0.08" - 0 1". The far left has been modified from a shape similar to the middle one, just because. I have done a couple of these and given them to friends and they all like them. They hold a decent edge and slice very nicely. The middle one is unmolested, the wood handle one has bee sharpened.
