I generally agree, and think it is sort of crazy. But green beetle on youtube regularly makes knives like this in a proper way, either forge welding a high carbon blade into some parent steel or carberizing a lower carbon steel. There are ways to make knives out of otherwise unsuitable steel, but all of those ways are far harder than hopping on some website and buying some 1075 or 1084 or whatever for a buck or two per foot.
